I love the recipe for shrimp picatta in Better Homes and Garden's stir-fries recipe book. I've tried it with veal and chicken and it's just as good. Basically you flour the meat (tenderize the veal) and brown it in diced garlice and olive oil (they call for butter) along with diced mushrooms. Then you cover the entire panful with a mixture of 1/2 sherry, 1/2 lemon juice, 1tsp capers and lemon pepper. I usually serve it with asparagus and garlic-buttered vermecelli.

Default Great, healthy quick recipe for empty-nexters

This is my first post - be kind please. I discovered this recipe a few years ago and it's one of my favorites. Prep time is about ten minutes, cook time about ten. It's health and, especially this time of the year, it's cheap. Youngers and teens don't necessarily care for it, but may be you can switch out some of the ingredients.

2 yellow squash, cut into medium chunks
1 zuchinni squash, same
1 sweet onion, same
1 red pepper same

Add the ingredients with a little oil (EVOO is my fave), some salt and pepper and mix. Spread out on a baking pan for fifteen minutes at 350 degrees. Let cool, then mix with canned tuna or chicken. Serve in pita bread and top with your favorite salad dressing. I use Thousand Island. My husband uses ranch. It's very tasteful and it's a one-dish meal. Little clean-up. This thread is great!

2. Open chili beans, tomatoes, black beans and soup. Drain and rinse black beans.

3. Add all ingredients including chili powder to meat mixture in Dutch oven. Bring to a boil; reduce heat, and simmer covered, over low heat 30 minutes, stirring occasionally.



Yield: 8 (1 ¼ cup) servings
Yummy! This sounds like my type of recipe, and I think the kids will like it, too!

Sascha41- we are HUGE fans of the squash mixtures, too. Try sprinkling some Grill creations tomato garlic pesto on the vegetables when you are cooking them. REALLY, REALLY, good. lynclarke

I just got this book from the library, called Cheap.Fast.Good! by Beverly Mills and Alicia Ross. It's great! I found some yummy sounding recipes and they are all pretty cheap. I picked out the ones I thought we might like, the easy ones to cook, etc. and copied them. I totally recommend it. You could probably find it on Amazon, maybe even used for cheap. Totally worth the price- trust me!
