any one make....
Pumpkin cheesecake. I really dont care for pumpkin pie but DH says he has to have pumpkin something for thanksgiving.... I am thinking about making pumpkin cheesecake everything i have read says it is more subtle on the pumpkin flavor. Anyone ever try this. I know the cheesecake factory has it around this time of year. I am just too scared to buy it and not like it. Any one??

I made one last year or the year before.
It was even a low fat recipe and turned out very very good.
BUT I have no idea what recipe I used. I just looked for it, and didn't come across it. Sorry!

i LOVE pumpkin cheesecake...i actually went on a search last yr when i was pregnant because thats all i could think about!!! Poor DH was going everywhere looking for one....now i want one again haha
and i dont like pumpkin pie very much either...as far as recipes, i know you can use the pumpkin pie filling and mix it in with cheesecake filling...my gf has a recipe...ill try to get it off her

I make this but I don't have a recipe. . .I just make it. I use:
packed pumpkin
cream cheese
vanilla pudding
milk
pumpkin pie spice
I mix these together until they look done. ; -) No eggs = no baking. Sometimes I add cinnamon or ground vanilla bean but hey--taste it as you go and then you can adjust accordingly. . .or have dh taste it.
Use a gingersnap crust. . .just crumble gingersnaps and mix them together with a stick of melted butter.
For the topping I blend together sour cream and brown sugar. I have no idea how much I add. . .I just add until it tastes done. It should be sweetly tart. Oh and I add a little vanilla, nut, butter flavoring (that's all in one flavoring) to the sour cream.
Pour the cream cheese mixture into the pie plate (with the gingerbread crust) and then pour the sour cream stuff on top. Stick it in the fridge over night.

That sounds so yummy Val...you have such good recipes...Was wondering is it pre-made van pudding or is it the package, no cook kind?

No. . .not pre-made. The non-cooked instant kind. I actually make all of my cheesecake this way. Sometimes I add a half a thing of cool whip too to make it a little creamier. I hate baking cheesecakes. I just don't have the patience for it.

Hey today at the grocery store I saw pumpkin spice pudding. I picked some up but I've never tried it. However, I often make "pudding pies" by making the pudding and then folding in a container of whipped cream and topping with another layer of whipped cream on top. If you have pumpkin spice pudding, you could do that.

Val-- That recipe sounds WONDERFUL! I also saw Pumpkin Spice pudding at the store yesterday! (Jell-O brand)
Kristin, if you aren't sure if you like Pumpkin Cheesecake, why don't you and DH try a slice from the Cheesecake Factory? Probably around 5 bucks for the slice (and for the whole pie you'll probably have to dip into your savings, or just not pay your mortgage for the month or something!! hehe!) It might not taste the same as what you would make at home, but it's still delicious! Olive Garden is also featuring Pumpkin Cheesecake right now. They top it off with whipped cream, a drizzle of caramel, and crushed pieces of graham. You could definately add the little extras to your own pie at home!
