Default Boxed pancake mix uses

I have several boxes of (of course FREE) pancake mix (Hungry Jack) that I need to use up. I have tried making muffins with it, crushing some cinnamon-flavored cereal into the mix, adding an egg, milk, a little oil. For a dozen muffins, I used 2.5 cups of mix, 2 cups cereal, crushed to about 1/2 cup, one egg, 1-1/4 cups of milk, 1/4-1/3 cup oil, 400 degrees, 20 minutes.

Next I tried plain muffins, with 3 cups mix, 1-1/4 cups milk, egg, oil. They turned out something between a muffin and a biscuit, OK with a salad, or for breakfast with scrambled eggs.

I'm thinking next of a coffee cake...plain on the bottom, with a crushed cinammon cereal streusel on top. I also think the plain muffin idea would be an ok base for an upside down cake (add the liquid from the canned fruit to the mix for extra sweetness).
