Default Can you use Cucumbers instead of zucchinni?

I have tons of cukes and have made all the pickle s we can eat. So I was wondering if I could grate up cukes and use them in my zucchinni bread recipe? anybody ever try this?

I'm no expert on steaks, , but I"ve made and eaten my share of quick breads, and it seems like cucumbers wouldn't have the mass to make it work. They're kind of light and hallow feeling, while Zuchinni is thick and meaty.

But hey, if you decide to give it a shot and it works, let us know!

I think I will try it in my Choc. zucchini cake recipe ( as soon as I can find it)

Will let you know how it turns out!

Some fun ideas for cucumbers:

Use them as a cracker - spread port wine or flavored cream cheese over them.

Slice big slices and mix in garlic, lemon juice and plain yogurt for a cucumber salad.

Mix tuna your favorite way and top the cucumbers, either plain or top with dice tomato as well, or grated carrots.

Dice the cucumbers small, and a little diced onion, mix with yogurt and black pepper - use over beef, like a greek Gyro sauce.

Cucumbers are low in calories, carbs and are very filling and refreshing. But I wouldn't try subbing them for zuchinni.

Do you by any chance have a good recipe for cucumber salad? I would like to make some tonight for dinner. It sounds refreshing and it is so hot here!
