Default Chocolate Mint Cheesecake Bars

I found this great recipe and wanted to share this you guys I found it on Bakespace. It was easy to make and it taste wonderful.....
Chocolate Mint Cheesecake Bars

2 cups finely crushed creme-filled chocolate sandwich cookie crumbs (about 24 cookies)
1/2 cup (1 stick) butter or margarine, melted
1 (8-ounce) package cream cheese, softened
1 (14-ounce) can Sweetened Condensed Milk (NOT evaporated milk)
2 eggs
1 tablespoon peppermint extract
1/2 cup semi-sweet chocolate chips
2 teaspoons shortening
14 Andes creme de menthe thin candies, chopped

Preheat oven to 325°F. In medium bowl, combine cookie crumbs and butter; mix well. Press crumb mixture firmly on bottom of 9-inch baking pan. Bake 6 minutes. Cool.
In medium bowl, beat cream cheese until fluffy. Gradually beat in eggs and peppermint extract until smooth. Pour over cooled cookie base and bake for 25 to 30 minutes. Cool 20 minutes; chill.
Just before serving, in heavy saucepan, melt chocolate chips and shortening. Drizzle over the top of chilled cheesecake bars. Sprinkle chopped chocolate mint candies over the top. Cut into bars. Store leftovers covered in refrigerator.

The minty cheesecake looks tasty. It would have been a good St. Patrick's Day recipe with a little green food coloring added.

If you like mint flavored desserts, this is a super recipe:

Peppermint Patty Brownies

1 1/2 cups margarine
3 cups white sugar
1 tablespoon vanilla extract
5 eggs
2 cups all-purpose flour
1 cup unsweetened cocoa powder
1 teaspoon baking powder
1 teaspoon salt
24 small peppermint patties

Mix butter, sugar, and vanilla. Beat in eggs till well blended. Stir in flour, cocoa, baking powder, and salt. Blend well.
Reserve 2 cups of batter, set aside.

Grease 13x9x2 inch pan. Spread remaining batter in prepared pan. Arrange peppermint patties in a single layer over batter about 1/2 inch apart.

Spread reserved 2 cups batter over patties. Bake at 350 degrees for 50-55 minutes till brownies begin to pull away from sides of pan. Cool completely in pan on wire rack.

This Recipe is not at all in anyway pleasing. I got this recipe from a differant site and it's the same one. But the recipe is wrong. there is not enough creamcheese filling. I was very dissapointed when making this. finished product did not turn out like the picture posted. Was not fluffy and light. it was mushy and looked very unapatizing. I baked it for 30 minutes on 325. then again for 10 more and then AGAIN for 10 more minutes. still when i took it out the middle was not cooked. but i had to take it out unless i wanted the sides to be burned. !!!!!

Aliceb I am so glad you posted this! I tried the recipe and it was divine! I'm not sure what MeganChristine is talking about. I was thinking about emailing her but she only added this one post back in feb.


This one is definitely going down in my cookbook for superbowl sunday! Thank yoooouuuu! Next time I'll post a photo when we make them. Before I could grab the camera they were all gone! My DH and DD ate them all.
