Default Cooking fish

My husband loves to grill. In an attempt to cut down on red meats and eat more fish, he decided to put sole to the barbecue. Using one of those wire cages that sell in the stores for a couple dollars, he spreads the fillets out inside. He skewers mushrooms, onions, tomatoes etc. to go along. He paprika's both sides, then while cooking he bastes the entire basket with lemon butter -- 1/2 c. lemon and 2 Tablespoons of butter melted. It tastes fantastic.
Anyone else have a great way to cook fish?

A fish kettle is definately the best way, everytime I had fish where it was not cooked in a fish kettle it has been very dry and flavourless. Not only that but you are left with a fish stock which can either be turned into a sauce for frozen for a later date.
