Food/recipe ideas for weekend trips..
I always find difficult to decide what to cook at home for one day vacation trips like going for a beach or hiking..
Let me know if you have any recipe ideas..?

If you're taking a cooler, how about cooking a chicken in the crockpot ... or baking it in the oven ... and then making fruity chicken salad with chopped apple, halved grapes, walnuts, celery, pineapple tidbits (whatever you like) etc. Just take along some pita pockets and when ready to eat, put a scoop of chicken salad in each pocket. We've done this a few times and it always seems to be a big hit with the family.

That sounds really good! I might have to try this with the kids one day. They love making fruit salad (yummy yummy......anyone with preschoolers will understand  )

Forgot to mention the 'dressing' for the chicken salad ... you can pretty much use whatever you like. I've used plain low fat mayo ... but I've also mixed half may and half fat free sour cream (I think this is my favorite), and once I mixed mayo and plain (not sweet) yogurt and a little buttermilk.
You can also add a little chopped herbs (dill, rosemary, parsley, thyme, scallions, chives ... basically whatever your family likes and you think would go well with the other ingredients.) I usually add a llittle parsley, a tiny bit of finely diced red onion or other sweet onion, and maybe a little rosemary ... but I avoid too many herbs if I'm serving this to guests other than my own family since I don't know their preferences.
In addition to pita pockets this is good on regular bread, but a hearty bakery bread works better than a finer textured grocery store bread, or for wraps or even just eaten by itself.
You can have lettuce leaves, sliced tomatoes or halved cherry tomatoes and thinly sliced sweet onions on the side to add to the pita pockets, sandwiches or wraps if you like.
