Default Gluten Free Desserts?

Hi,

Does anyone know of any good gluten free desserts? There are some premade boxed desserts but I wanted to know if anyone has experience making things from scratch?

I have tried in the past and it hasn't worked out too well.

Any ideas, please pass along.

I picked up a book at a library sale several years ago that I just love. It's called Creative Cooking Without Wheat, Milk and Eggs. The author is Ruth R. Shattuck and it's copyright 1974. If you can get a copy of it, I would highly recommend it. We have milk allergies in our family and there are some good recipes in there.

She divides everything up according to what isn't in there. For instance "Milkless Recipes Containing Egg" and "Eggless, Eggless and Milkless and Low-Fat recipes."

This is one of the recipes from there, to give you an idea of what she has.

BROWNIES (gluten and milk free)
These are delicious and keep well several days - if they have a chance.

Melt together over hot water:
2 sq. unsweetened chocolate (2 oz.)
1/3 c. shortening (part butter if allowed)

Cool slightly. Transfer to mixing bowl.

Beat in gradually:
1/2 c. minus 1 T. brown sugar
1/2 c. minus 1 T. white sugar
2 eggs, slightly beaten

The mixture should be quite stiff.

Measure and sift well:
1/2 c. unsifted brown rice flour
2 T. cornstarch
1 tsp. baking powder
1/2 tsp. salt

Stir into chocolate mixture. Add 1/2 c. chopped nuts.

Pour into well greased 8x8x2 inch pan. Bake at 350, 30-35 min. A dull crust will appear on top of brownies as they bake. Test with a toothpick.

Cool on rack in pan. Cut into squares.

THANK YOU!!!! This is awesome! I have been trying many different types of boxes as well as recipes I have found and it just isn't easy.

I will def try this recipe and look for the book to get.

My wife has the glutten problem also.

I make a lot of cheesecakes and use several different 'crust' for them. Toasted coconut, crushed nuts, puffed rice and even rice crispies, if can be found without malt.

Run them through a food processor, to produce a heaping cup! Add 3 TBSP sugar and 3 TBSP of melted butter. Mix thouroughly and press into the bottom of the pie pan.

The rest of the pie or cheesecake is your option.

There is a new book dedicated to just gluten-free desserts on the market. It is rather unique in that it is guaranteed, and in full-color throughout. The sample pictures look wonderful. And, some of the free recipes on the site selling the book are quite good (some breads and other recipes.

The web site shows 11/21/2006 as the date available.
