We have 3, all paid in full every month.
Each earns us 5% back on most (gas, grocery, drug store) purchases and had a $100 sign up bonus when I applied for them.

I have several store cards that stay in a drawer unless I'm specifically going there. Using them keeps me on the stores' mailing lists and I always pay them in full.
I have a MC with a balance, and a 0% Visa that I just transfered most of the MC to so we can get it paid off.

I have two major credit cards that I use for everything and anything solely due to the perks I get for using 'em. I also pay my balnce full for every billing cycle.

I use Discover for the 5% cash back on gasoline purchase and Citi card diamond rewards for 5% rewards back on grocery/drug store purchase(I redeem mine for Shell/Exxon gift cards).
Anything else ( including monthly bills such as Vonage/ dish network /T-mobile/ Comcast goes on Discover for 1% cash back.
The only departmenta credit ard I use is Kohl's (a) because it is my favourite store ( I hate malls) (b) Frequenty when you use their charge card you get 15 % on top of regulat, sale and claranc price.

One all the time, and a second I get for the promotion and then cancel. My primary is the Citibank Diamond Preferred rewards. I get 5% of grocery, gas, and drug store purchases in my rewards account. I charge EVERYTHING (even less than $1) on this card and pay it off every month. My DH and I are gonna go to Belize with the rewards points as soon as I can get some time off work! Citibank keeps sending me more pre-approved offers with the $100 rewards sign up bonus so I'll get the second card, get my reward, and cancel it. I did all my Christmas shopping that way last year. It doesn't seem to affect my credit score cause I'm always above 750.
