Default Leftovers = Rollovers

My family doesn't eat leftovers. It's their picky-eater dad's fault . Instead, I do "rollovers". Leftover taco meat poured into the next night's spaghetti sauce isn't a leftover, it's a rollover! They haven't caught on yet!

Taco meat ROLLS OVER to spaghetti the next night. What rollovers do you do?

I only cook a few nights a week, we "rollover" or do leftovers alot.
If making pasta for dinner, I might cook extra pasta for pasta salad. Lots of leftovers can be made into nice wrap sandwiches. extra baked potatoes might turn into fried potatoes or be diced and added to omelets, etc.
I love shortcuts.

My favorite "roll over" is with meatloaf and baked potatoes. I always make plenty so that the second day I can dice up the remaining meatloaf and potatoes and fry them together in a few tablespoons of butter. It is crispy and delicious. My meatloaf is topped a w/ketchup and brown sugar glaze, so when you toss it all together the next day, the glaze covers the potatoes as well while it all browns up. My family LIVES for these left overs, mearly tolerating day one to get to them!

I LOVE rollovers too! They stretch the budget and save lots of time!
A few of our favorites....

roast chicken (sticky chicken) goes for 3-4 days----day 1. chicken and mashed potatoes w/ veggies day 2. chicken shepherd's pie day3. chicken stir fry or fried rice, day 4. chicken soup

pork roast--day 1. roast, rice or taters and veggies, day 2 pot pie or shepherd's pie day 3. fried rice or pork and cabbage day 4. split pea soup

meatloaf--day 1. meatloaf, taters and veggies, day 2. add leftover meatloaf to pasta sauce and serve over pasta day 3. meatloaf sandwiches

crockpot chicken taco meat (boneless chicken w/ 2 cups salsa) turns into kinda tortilla soup
