Lets see how many different recipes we can get to use Zucchini!!!
I thought it would be a good idea to see how many recipes we can come up with for all that lovely zucchini we all are getting out of our gardens!
Heres a couple to start!
Zucchini Patties
INGREDIENTS:
• 1 1/2 cup grated raw zucchini
• 2 tablespoons minced onion
• 1/4 cup grated Parmesan cheese
• 1/4 cup all-purpose flour
• 2 eggs
• 2 tablespoon mayonnaise
• 1/4 teaspoon oregano
• Salt and pepper to taste
• 1 tablespoons butter
PREPARATION:
Press excess moisture out of grated zucchini between paper towels. Mix together everything but butter to make the batter. Melt butter in skillet. Spoon batter (about 2 heaping tablespoons per patty) into skillet. Flatten lightly with spatula. Cook over medium heat until nicely browned on both sides. Serve plain or top with tomato sauce and grated cheese. Serves 4.
Zucchini Pizza
INGREDIENTS:
3 cups grated zucchini
3 eggs, well beaten
1/2 cup flour
salt to taste
2 1/2 cups shredded mozzarella cheese
1/2 cup chopped black olives
1/2 cup finely chopped green onions
1/2 cup finely chopped Italian pickled peppers or chopped marinated artichoke hearts
jalapeno pepper rings, as desired
1 tablespoon fresh oregano or 1 teaspoon dried oregano
1 1/2 teaspoons fresh basil or 1/2 teaspoon dried basil
3 to 4 small tomatoes, thinly sliced
salt and pepper, to taste
PREPARATION
Generously butter a 9x13-inch baking pan. Preheat oven to 450°. Put grated zucchini in a colandar and press out as much excess liquid as possible. Put zucchini in a mixing bowl. Add well-beaten eggs, flour and salt. Mix well and spread in buttered pan. Bake in a 450° oven for 8 minutes. Remove pan and reduce oven temperature to 350°. Cover the zucchini base with cheese. Combine ripe olives, onion, and chopped pickled peppers. Spread over cheese. Arrange jalapeno pepper rings over top. Sprinkle with fresh or dried herbs. Arrange tomatoes on top. Sprinkle with salt and pepper. Bake at 350°, uncovered, for 25 minutes. Serves 4 to 6.

Re: Lets see how many different recipes we can get to use Zucchini!!!
How did you know I have about 10 zucchini sitting in my fridge right now? My FIL is a big time gardener and keeps us stocked in the summer . I steam it alot and I love fried zucchini. Also we like to make zucchini lasagne, just cut the zucchini in long strips and use them instead of noodles, we put a few sliced potatoes along with the zucchini strips and its really good. Just make it and bake like any lasagne recipe.

My parents always grew enormous zucchinis, sliced them thick and breaded and fried them, like eggplant parmesan? Jar of spag sauce, some cheese on top, like that.

Those all sound great! I always have way to much every year so I am always looking for new ways to fix it! I shredded up a ton of it last nite and divided it into 2 cup portions and froze it. Then I can do breads, cakes, and cookies all winter!

2 c sugar

2 c flour
1/4 tsp baking powder
2 tsp baking soda
3 tsp ground cinnamon
1 tsp salt
1 c raisins
1 c chopped walnuts
Beat eggs lightly in large bowl. Stir in oil, sugar, zucchini and vanilla.
In seperate bowl, sift flour, baking powder, baking soda, cinnamon, salt.
Stir dry mixture into egg mixture until well blended. Stir in raisins and nuts.
Spoon into well greased 8X5X3 loaf pan.
Bake for 1 hour at 350 degrees, or until center springs back when lightly pressed with fingertips. Cool on rack 10 minutes. Remove from pan.
Now I need some zucchini, so I can make some!
Sounds great! I will try this tonight!

We only got one from our garden this year!
Here's my recipe:
Wash, slice and fry with bacon.
If you have an aquarium, the fish love this veggie.

I agree. I don't like squash in general, but I grow it because my wife likes it. The only type that I like is Butternut, which we use to make 'Pumpkin Pie' and also cook as candied 'Sweet Potatoes'. I can't taste the difference between the pumpkin and the butternut!
