I have a few of them! But the one my family likes the best is a mexican casserole called Taco casserole.
Brown 1 lb. of either gr. turkey or beef
add a packet of taco seasonings
mix in a can of creamed corn
throw some shredded cheddar on top along with some crushed corn chips
put in the over for about 20 to 25 minutes at 350
while that is cooking, cook some rice on the stove top! Serve it w/ the rice, and you have a quick, easy, yummy meal.

I pretty much throw my casseroles together but there are usually a couple of things I like to add to them to make them extra yummy. Such as french mustard or packets of soup to make the gravy really tasty.

One of my favorites is to put biscuits on the bottom of a casserole dish (flatten them and pinch them together). Brown ground beef with garlic and onion powder, drain and put that on top of the biscuits. Then warm up cream of potato soup on the stove with about a cup (or a little more) of grated cheddar cheese. Once that melts, pour it on top of the ground beef and top with grated cheddar cheese. Cook at 350 for about 30-40 minutes - yummy!

Baked Seafood Salad

Ingredients
1 c rice (we use 2 c. rice) *1 c rice to 2 ˝ c’s water
2 ˝ cups water (we use 4-5 c water)

˝ cube butter or margarine
1 c chopped celery *can use 1 tsp (or more to taste) celery seeds
˝ med onion (*OK to use dried chopped onions – sock it in water 10-15 mins to reconstitute first!)
1 c chopped green bell pepper

1 can undiluted condensed cream of chicken soup
1 can tuna
1 c. mayo
1 can shrimp (we use 2 cans of shrimp)
small can of mushrooms and/or small bottle of pimentos if desired (we never use these)

Cook rice and water over low heat while you are doing the veggies.

Melt the butter (margarine) in a heavy pan. Add the chopped celery, onion, and green bell pepper and sauté about 20 mins, while the rice cooks. The onions should be slightly yellow. Add the can of cream of chicken soup, tuna, shrimp, and mushrooms or pimentos if you are using them. Mix thoroughly.

Line a large backing dish (we use the large deep dish corning wear with a lid) with hot rice, cover the rice completely with the vegetable mixture and bake at 300 degrees- 325 degrees for ˝ hr or more. Depending on your oven. Delicious straight out of the oven or reheated later.

Tastes GREAT as leftovers!

One of my favorite casseroles is Baked Spaghetti. If you use whole wheat spaghetti, this casserole can be really nutritious for you since it includes several different veggies. Of course it also has cheese, mayo, and sour cream (or yogurt) but it tastes truly wonderful.

Just click on the link above to get the recipe, and please leave me a comment if you decide to make the dish!

I love french fry...and tater tot casseroles.

Super easy....1 lb ground beef browned / mixed with onions (if you like).

Some frozen peas, corn...whatever vegetable you like mixed with 2 cans (cream of whatever) soup. (I change the recipe whenever I feel like it for variety.

Put in casserole...top everything with fries or tater tots and cook until brown.

Seriously yummy!
