Default Need a Recipe For Chicken Breasts (Bone-In)

I stocked up on chicken breasts when they were on sale last month and now I need a good recipe. They are the bone-in kind with the skin still on. Does anyone have any good chicken recipes?

Super Easy, but really tasty ...

Marinate overight if possible in bottled Italian Salad dressing and either bake in the oven (350 for about an hour) or cook in the crockpot. I usually just put mine in my crockpot insert or in a large ceramic roasting dish and pour on the dressing, then I cover and put in the frig overnight and take it out and put in the crockpot base in the morning ... or in the oven when I get home from work.

And here's one I made up one night based on what we had on hand ... (though it's probably similar to something on a Campbells soup can )

Place the chicken breasts in a large roasting pan (I removed the skin) mix one can of cream of mushroom or cream of chicken soup with one can of sliced mushrooms and about half a bag of frozen broccoli flowerettes. Pour mixture over chicken and bake till chicken is done and sauce is bubbly. Then stir in about 1 cup of shredded cheese (I used the Sargento Bistro Asagio w/ roasted Garlic variety) and return to oven till cheese melts.

Serve with rice or noodles.

Crockpot chicken Teriyaki

Remove skin and place chicken in crock pot ... add one small bottle teriyaki sauce, one half cup brown sugar, one can pineapple with juice ... cook till done and serve with rice. Discard pineapple because it will taste nasty ... if you want to serve this with some pineapple, I'd suggest saving some of the pieces and not cooking them in the crockpot with the chicken, instead warm them in a samll skillet with a little of the sauce just before serving.

BBQ Chicken

Cook chicken in crockpot or oven with bottle BBQ sauce ... *OR* 1 cup ketchup mixed with 1.5 cups Coca-Cola. (Sounds weird, but it makes a good BBQ sauce)

3 Ingredient Italian Chicken

Place Chicken in large container and add one cut up 'chunk' style pepperoni ... about 1/4 lb is plenty. Peel a small bag of lemons (about 6-8 depending on size) and cut into chunks ... put the lemon pieces and juice into the dish with the chicken and pepperoni. Cover and refrigerate overnight.

When ready to cook ... put the chicken, pepperoni, lemon and juice into a skillet and cook till brown. (The pepperoni will release enough oil, you don't need to add any. And the lemon will cook away to almost nothing, but a little thick 'sauce'.) Turn the heat to low and allow to continue cooking till chicken is completely done or once browned, you can place it in a roasting dish and cook in the oven.

This is fairly spicy because of the pepperoni, but my family *LOVES* it!

Can you start the crock pot with the insert cold? I thought it would crack or something?

Hmmm ... I don't know what the directions say ... but I've been doing it for two or three years, at least, and I've never had a problem.

I wouldn't put an ice cold glass or ceramic dish on a stove burner with high heat ... but the crockpot is such low gradual heat, that I would think it just warms up the crock maybe?!?!?

When I have a lot of bone-in chicken breasts, I just bake a pan of them with seasoned salt, 350 degrees for one hour. When cool, remove the meat from the bones (DH does not like meat with bones). Then I make stock from the bones and use for soup. I serve a roasted boneless breast with rice pilaf and a veggie for dinner. If the meat has produced good pan drippings, I'll make some gravy from that for dinner. Also, the refrigerated cooked meat will keep for 4-5 days, and you can use it for salads, soups, sandwiches, and casseroles.

Oh no ... how could I forget my son's FAVORITE chicken dish ...

CowBoy Chicken ...

Place chicken in a roasting pan
cover with a mixture of 1 jar salsa (about 2 cups) & 1 cup brown sugar (more or less to your taste) & 1 squirt brown mustard

Bake at 350 about 1 - 1.5 hour. Serve this over rice with corn chips for dipping up the yummy sauce.

Emeril taught me this one:
(okay it was from one of his articles in some magazine!)

Rinse and dry the chicken pieces.
Put them in a shallow roasting pan and generously brush with olive oil. Sprinkle with "Emerils Essence" (original)
Bake at 400 degrees for 1/2 hour and then turn the oven down to 350 for one hour.
Crispy, yummy skins. Moist yummy chicken.

Get Pan squeeze 4 lemons in pan , add a little veg. oil, sprinkle generously w/Lawrey's garlic salt over sauce, add chicken and add diced potato's. cook at 400 uncovered until chicken and potato is done. Check and pour juice over chicken and potato's for juicy garlic/lemon chicken w/potato.

Sweet and Sour Chicken Breast

Chicken breast 3 lbs.
Brown sugar, packed 1 cup
All-purpose flour ¼ cup
Water ½ cup
White vinegar ¼ cup
Ketchup 1 ½ Tbsp.
Soy sauce ¼ cup
Garlic powder ¼ tsp.
Onion flakes 1 Tbsp.
Salt ½ tsp.
Prepared mustard ½ tsp.

Also can use chicken wings or drumsticks! If wings, discard tips and cut wings apart at joint. Place chicken pieces in 5-quart slow cooker.


Mix brown sugar and flour well in saucepan. Add water, vinegar and ketchup. Stir. Add remaining 5 ingredients. Heat and stir until boiling and thickened. Pour over chicken. Cover and cook on low for 8 to 9 hours, or on high for 4 to 4 ½ hours until tender. Serve from slow cooker or remove to platter.
