I made homemade pizza tonight. I used the Martha White pizza crust. All you do is add water, and it really was pretty good I topped it with sauce, mushrooms, tomatoes, baby spinach, red onions and cheese. Yum! We live in the sticks and the pizza guy won't deliver out here. We are slowly becoming pros at making our own.

Sure, Christina! It's really easy & yummy!
You take 1 lb. of ground beef and add 1 egg, some diced onion, a little bit of milk (I wing it, but I would guess about 3 tablespoons full) 1/2 cup of italian bread crumbs, and 3 to 4 tblspns. of chili powder. Depending on how spicy you like it. Mix it well, and then press it into the bottom of a 9 by 9 pan. Put it in the oven at 350 for about 20 -25 minutes. Then while it's cooking, I mix the mashed potatoes & a drained can of mexicorn in a bowl. Then I put it in the microwave for 2 minutes to warm them up. I used the "Simply Potatoes" from the refrigerator section at our local grocery store. They are real mashed potatoes, and they are really good, not to mention easy! I buy the garlic flavored ones. You can make your own if you'd like, but this is quicker.
When I pull the meatloaf out of the oven, I layer a few slices of american cheese or shredded cheddar (whatever you have on hand) on it, then I spread the mashed potato/corn mixture on top of that! Plop in back in the oven for an additional 10-15 minutes, and that's it! Oh, in between all of this, I do attempt to drain off the meatloaf before the cheese & spread.
This is one of those recipes I got years ago, and have been making for so long that I just kind of "wing it" now. lol!

Default Ham & cheese calzone!

That's what we had for dinner tonight, with mac & cheese on the side. I have this recipe for an easy, quick, but yummy calzone, and my dh just loves it!
It takes like 5 minutes to prepare, 30 to cook, and that's it.

Sure, Christina, but I'm terrible at giving recipes. I don't measure anything-- I kinda cook by site and taste (probably partly why I'm carrying around so much extra weight )

Anyway, for kofta I grind onion and parsley. I add that, along with salt, pepper, and allspice to taste, to ground beef or lamb. I mix well, then shape. I use long, sausage-like shapes, but you could use regular patties, too. You can put the sausages on a skewer and grill or broil. If I'm feeling lazy I just throw it in a pan and cook it in the oven. I cook it at 350 to desired doneness.

For the cucumber yogurt dip, I whisk the yogurt until it is smooth and slightly thin. I add chopped cucumber, minced garlic, and salt and pepper to taste. Sometimes I add a touch of vinegar for added zip. Some people add a bit of dried mint, but I skip that.

I serve the kofta with pita bread and a platter of mixed veggies-- tomatoes, olives, green onion, etc. You could also use hamburger fixins. Serve the yogurt on the side. Quick, easy, and tasty!

Tonight we had a slow cooker dish called Cheesy Chicken. It's one of those "feel good meals" that we love! You serve it over rice, and/or biscuits. Yum-Yum.

An Egyptian dish hubby calls pan potatoes... cooked w/ potatoes, tomatoes, onions, garlic, tomato sauce, and lamb... all baked in one pan. Very easy. Served w/ rice and leftover chicken soup.
