Default pork chops - what do you do with them

I loaded up on pork recently.....pork tenderloins (found a good recipe for it, nice easy spiced cocoa rub - is anybody interested....if so I could post it)....a few packs of pork chops.

I have in the past with pork chops, seasoned them, poured a can of cream of celery and baked them in oven...comes out tender.
Used pork chops - breaded, pan fried, then added marinara sauce and mozzarella and melted it in toaster oven

And now, I have hit a rut and just don't know what do to with them. Any help please.....

I have stocked up on same canned tomatoes, whole canned tomatoes and diced tomatoes...if anyone has a recipe with pork chops and tomatoes, please definitely let me know.

All other pork chops recipes are welcome.....

I have already looked at some websites but haven't found any "great recipe" I wanted to try yet....

Love pork chops! SO cheap and easy to cook! Unfortunately, they make DH break out in canker sores like you wouldn't believe!

However, just before we learned that, I put a ton of them in plastic bags with some herb and oil and vinegar marinades (recipes for which you can find all over the Internet) and froze them. They froze beautifully, and they actually did their marinating during the thawing process.

I assume they all turned out well, because after eating the first ones (which were great) DH's mouth exploded and I gave the rest to my sister, who used them over the next two weeks and raved about them the next time she saw me, asking me WHAT I had used and WHY I had given them away! She said they were delicious and easy to cook.

And just because I'm spreading Karma (okay, and am addicted to my computer because it helps me put off writing my thesis), here's a marinade recipe website I found. Many of the recipes say they're specifically for chicken or beef, but can probably be used for pork as well:

Oh cool thanks.

also, I was wondering, there are so many cuts of pork chops....do you buy the thin ones or the thick ones....
And you say they are so cheap....what were your sp prices for the chops? I know you aren't buying any more of those.....so sorry to hear about your hubby's cancker sores....that must have hurt!

I called my dad (who used to be a butcher and still does all of my family's meat shopping) to make sure I was telling you right.

He says chops basically boil down to shoulder chops (tougher, lower quality) and loin chops (more tender, higher quality.)

For our area (the west) he says an average price for shoulder chops is 1.50/lb. A hot price, he says, is .89-.99/lb.

For loin chops an average price is 2.50/lb, hot price 1.50/lb.

He says also that you can sometimes just go to the store and purchase the ENTIRE STRIP if you have a large family or are planning make ahead cooking, and then have the meat counter cut it into chops for you. This won't save you money on your shoulder chops, but it'll bring the price down on the loin chops in many cases. HTH!

(From a frugal/cooking perspective, if you're planning on marinating chops, there's no reason to worry about getting a more tender cut because the marinating process will tenderize the shoulder chops.)

We make this all the time; Peaches N Pork Chops. Pretty easy and everyone seems to like it.

My DD and I like them lathered in barbecue sauce. My Dad likes them breaded. My DS likes them stuffed and my DH will eat them anyway as long as they are cooked ~

I do a jamaican jerk rub and then grill them...goes great with like a mango chutney

pork parmesean? Make like veal or chicken parmesean but with pork, it will use up some of your tomatoes, too!!!

I use a slow cooker often, so you could put it in a slow cooker with water or broth and seasonings, and cook until you can break it apart with a fork. Drain, add BBQ sauce and you have BBQ pork... YUM! Or drain some of the liquid add tomatoes, garlic, sofrito (a hispanic condiment/seasoning), some seasonings, mix together with shredded pork and serve on rice (or next to it)

You could look for a recipe for "Pollo Guisado", this is kindof like that, but with shredded pork.
