Easy Chicken Stroganoff
This one is fairly quick to make and really good! I got it from a mailing list I was on, and have made it several times for the kids. You CAN exchange the chicken for a beef and the cream of chicken for a cream of mushroom soup (you do not need to add the sliced mushrooms then unless you want them - and I substitute the sherry for milk - just don't like sherry). Tastes great and is hearty and fast.
Easy Chicken Stroganoff
2 chicken breasts, skinned, boned and sliced into one inch strips
1/4 tsp. minced garlic
1/4 tsp. pepper (white, if available)
1/2 cup low fat, reduced sodium cream of chicken soup
1 cup sliced mushrooms
1 cup plain yogurt or fat-free sour cream
2 tbsp. sherry
1/4 cup fat free Parmesan cheese
Place chicken pieces in greased casserole. Combine garlic, yogurt or sour cream, soup, pepper, sherry and mushrooms. Pour over chicken. Sprinkle cheese over top. Microwave, covered, on high for ten minutes or until chicken is no longer pink. Serve with noodles, rice or bulgur.

Here's another really good one!
We tried this last week and it turned out great! I added some extra seasoning though.
Summer Spaghetti Salad
16 oz. mozzarella cheese
5 ripe tomatoes, peeled, seeded and coarsely chopped
1 C. fresh basil leaves, coarsely chopped
1 large clove garlic, pressed
2 T. salt
1 T. olive oil
16 oz. thin spaghetti
salt and pepper
Bring a large pot of water to a boil.
Cut the mozzarella into small cubes and set aside in a small bowl. Combine the tomatoes, basil and garlic in another bowl.
When the water is boiling hard, add 2 tablespoons salt and the oil. Add the spaghetti and cook just until it is al dente. Do not overcook. Quickly drain the spaghetti and return it at once to the warm pot. Immediately stir in the mozzarella; the heat of the pasta will melt it slightly. Stir in the contents of the other bowl. Season to taste with salt and pepper. Transfer to a serving bowl and serve at room temperature.
Serves 4 to 6.

Asian Style Porkchops--this one is fabulous!
5 T soy sauce, 2 T hoisin sauce, 2 cloves crushed garlic, 1 T honey, 1 T sugar, and 4 one-inch thick center-cut pork chops.
Marinate pork chops using ingredients above. Marinate in refrigerator for at least 1 hour, but preferably overnight (24 hours). Broil pork chops--2 minutes, rotate pan, 2 more minutes. Remove from broiler and turn over pork chops and spoon some reserve marinade over tops. Return to broiler for about 4 to 7 minutes. Serve with some instant rice.
Got this from the Martha Stewart website.

This is one of my favorite recipes.
Cook chicken breasts in a bit of oil, till they are browned on each side.
add baby carrots, sliced bellpeppers, onions.
basically you can add what ever veggies you like.
add 2 cans of Del Monte diced tomatoes, garlic, basil & oregano style.
cover and let simmer. Then I make some minuet rice.

we do something super easy when we really dont want to cook. I cook almost everything from scratch but when I am lazy we use Cheesy Au Gratin potatos two boxes prepared to the instructions and we cut up cheesy lil smokies or cheddarwurst top with shredded cheese of choice. We use cheddar or pepper jack usually serve green beans on the side only takes about 20 mins
