Thumbs up RAMEN NOODLE COLESLAW - fairly inexpensive, very good, and quite unexpected!

I would never have believed how YUMMY this slaw was if I hadn't tasted it myself at a birthday party this weekend. It was fantastic!!!


RAMEN NOODLE COLESLAW

You may want to break up the noodles a bit while still in the bag because they're hard on the hands. Don't add dressing till just before ready to serve. If taking this dish off from home, transport the dressing in a separate container.

Salad:
1 pound bag of cole slaw or broccoli slaw (or similar amount of cabbage, red cabbage, carrots, broccoli, etc. that you process yourself)
1 bunch of green onions (optional)
2 packages ramen noodles, broken up (Oriental flavor - or 1 oriental, 1 chicken)
4 oz. package of almond slivers
4 oz. package of sunflower seeds (shelled)

Dressing:
1/3 cup cider vinegar
½ cup sugar (more or less to taste)
½ cup oil
2 packages of ramen noodle seasoning


Combine salad ingredients and dressing ingredients seperately. Toss salad with dressing right before serving.

I have been making this sald for years although we call it oriental salad. It is yummy! The bad thing is we just realized that DH gets terrible migranes triggered by MSG and I heard that raen has MSG in it. He was disappointed becasue he too loves this salad.

I entered this salad in a cooking contest and won 3rd place and $25 bucks. I love to cook. I just entered a recipe in the Pillsbury Bakeoff; would really love to win that grand prize $1, 000,000.00 Even if I just got to be 1 of the 100 finalists would be great.

I remember that my aunt made this at a family reunion several years ago and I wouldn't touch it - what, ramen noodles in cole slaw? Then my friend made it last year and I tried it - and I fell in love. I beg her to make this whenever we get together - this is one of my favorite dishes.

It is also really good as a light main dish for summer if you add some cooked chicken, cilantro, and some crushed red pepper to give it a little "kick"

Isn't the seasoning packet chicken or beef or veggie bullion powder?
Probably has salt and pepper in it too.
Maybe some onion powder too.
What else would you guess?

so, probably a dumb question but, do you
cook the ramen or put them in the salad uncooked?

Not a dumb question at all ... I asked the birthday party host the same thing!!! You put them in uncooked and they absorb the dressing and get soft ... but that's why you want to wait till just before serving to add the dressing ... according to her the noodles eventually get too soggy and she doesn't even keep her left overs ... if it's not all eaten she throws it out. I don't know if I would do that ... I'd probably try to save the leftovers ... but since I've never done it, I can't really say how 'mushy' the noodles get.

Maybe one of the ladies who's made the salad before will know.

Actually, I just realized that I share this MSG sensitivity also after doing some testing on myself. I looked thru the cabinet and could not believe all of the stuff that contains MSG....from noodle soup mix to Almond Accents. I am so bummed. Looks like I will be doing some experimenting with this recipe to make it good w/out the ramen packet

I use to eat this salad as leftovers also. The noodles get soft but not gross mushy.
