This is a delicious holiday treat!
CRANBERRY JELLO SALAD
1 twelve-ounce package of raw cranberries
1 cup of diced or ground celery
1 cup of chopped/slivered/or diced nuts, (I like slivered almonds)
1 juicy orange (naval)
1 can of crushed pineapple
2 cups of sugar
2 large or 4 small packages of Jell-O, (your favorite flavor!)
2 packages unflavored Knox gelatin, (because of the pineapple and juice, this is needed to help the salad gel.)
4 cups of water
Wash cranberries. Discard the rotten and soft ones. Grind in food processor.
Cut orange into quarter sections. Remove seed and white pith from center of orange. Grind orange, including peel, in food processor.
Combine cranberries, celery, nuts, orange, crushed pineapple with juice, and sugar and let stand.
Thoroughly, dissolve Jell-O and gelatin in 4 cups of hot water. Chill.
Before Jell-O sets, blend in all other ingredients.
After salad gels, top with mayonnaise or sour cream.
This needs a 3-quart dish!
