Default Taco Bell Salsa Recipes Thread

I bought many jars of salsa today at Meijer's.

Here is one of my favorite, easy recipes
the entire family loves.
Adjust the amounts to suit your needs.


Mexican Chicken & Rice

Ingredients:
1/2 bag frozen chicken tenders
1 jar Taco Bell Salsa
Water & instant rice to make 3 cups of rice


Quickly cook frozen chicken tenders on top the stove.

Rinse the cooked chicken.

Add 1 jar of Taco Bell Salsa.

Add additional water.

Bring to a boil.

Add instant rice


Stir.

Place a lid over top for 5 minutes or longer for the rice to cook.

This main dish can be topped with
Parmesian Cheese,
Stock pile cheese,
Sour Cream,
Parlsey,
Onions,
or nothing!

It is quick, delicious, and easy!

We just had this for lunch today.

Cowboy Chicken


1 Jar Salsa
1/4-1/2 cup brown sugar (just depends on how sweet you like things)
1-2 tbsp. brown mustard
1 chicken cut up, or pack of breasts or thighs or whatever you like

Stir first 3 ingredients together, pour over chicken and roast in oven or cook in crockpot.

Serve over rice and/or with corn chips to scoop up the yummy sauce!


Mexican Meatloaf

Just make your favorite meatloaf recipe but substitute Salsa for most of the liquid ingredients (ketchup, tomato sauce, steak sauce, etc.)

Here's my 'sort of' recipe, but I don't usually measure anything so all amounts are estimates.

1-2 lbs ground beef (can also use any other ground meat)
1 cup plain oatmeal (can use bread crumbs or crushed crackers)
1 egg
1 cup salsa or however much the meat/oatmeal mixutre will absorb to form a nice loaf

Mix thoroughly, shape into loaf in middle of roasting pan. Cook in oven at 375 till brown and fully cooked. Top with additional salsa during last 5 minutes of cooking or serve with salsa on the side.


Meatless Taco Salad

1. Drain and rinse one can each of:
Kidney Beans
Black Beans
Red Beans
(and/or Garbonzo beans, white beans, pinto beans, basically whatever beens you like and/or have on hand)

2. place in large glass or plastic bowl and mix with:
one cup Salsa
one cup Catalina salad dressing (or use all salsa if you prefer)

3. Marinate overnight in refrigerator - Marinating the mixture with the salsa overnight allows the flavor to permiate the beans and believe it or not, eating this is nothing like eating cold canned beans.


4. Before serving mix in:
one chopped sweet onion
one diced tomato
once can drained black olives (slices if you prefer but we like whole)
one cup shredded cheese

5. Pour this mixture over shredded lettuce, top with more cheese, serve with corn chips, sour cream and additional salsa

This is great for taking on picnics and to potlucks because, while you want it to stay cool, since it doesn't have meat you don't have to be as worried about keeping it cold to keep it from spoiling.

GREAT IDEA !!!

I make omelettes with salsa!!

put mozzerella cheese and salsa in it YUMMY IT IS GOOD

a couple years back, a friend told me that she uses salsa to season meat for tacos, and I haven't used packaged seasoning since!!!
Brown and drain ground beef, season with seasoning salt, if desired, add salsa to taste (I use a jar for 2 lbs meat), simmer and serve. Use in tacos, burritos, tostadas, on top of chips for nachos, on top of rice, etc. etc.
Also works with chicken. Chop a couple boneless chicken breats in bite size pieces. Mix with salsa...simmer and serve as above.

I haven't tried using salsa in it yet ... but I would guess you could substitute 6 oz. or so of Salsa for the Rotel tomatoes in this recipe ... which is one of my hubby & son's favorites ... Mexican Supper Rice

1 jar salsa
2 cans chicken stock or equivalent fresh
1 can whole-kernel corn or equivalent frozen

You can just heat this up, or for a little tastier soup, start with a chopped onion sauteed in a little olive oil. Sprinkle with fresh chopped cilantro if you have it.

SOUNDS YUMMY -- DH would think it's boring BUT sounds awsome to me!
